Taco Soup

This is SUPER EASY!  It’s delicious and cheap, but it doesn’t taste that way.  I often will make this when we have guests and they always rave about it.  My very favorite part?  It’s super fast so I don’t spend my time in the kitchen, instead of hanging out with our guests.

TACO SOUP

Ingredients:
1 can cut green beans, undrained
1 can whole kernel corn, undrained
2 roma tomatoes, diced
1 avocado, sliced
1/2 lbs ground hamburger, browned
1 can sliced olives
1 can black beans, rinsed
1 can kidney beans, rinsed
1 packet taco seasoning

Toppings:
Sour Cream
Tortilla Chips
Shredded Cheese

Directions
1.  Mix all the ingredients in a large pot.  Don’t drain the green beans and the corn, the corn and green bean juice help make up the soup.
2.  Add 1/2 cup to 3/4 cup of water to the pot and stir in the taco seasoning (mild or hot, per your tastes).
3.  Turn the stove to medium high and cover the pot.  Let simmer for 10-15 minutes.
4.  Dish into bowls and top with a dollop of sour cream, shredded cheese and crushed tortilla chips.  Enjoy!

Serves 4-6

Weekend Wander #76

Hey all!  Sorry I forgot to put the linky up last night!  I was distracted being totally ticked off at our landlord.  The nerve of some people, seriously.  I can not wait to get out of this place and be the boss (well, co-boss if you count the hubby).  Gah!  Twenty-seven more days, only 27 more days.  I can make it, right?!

Anyway, if you didn’t catch that, we are closing on a house in 27 days and I’m trying to get us packed up and moved.  I’m so tired of moving.  Three moves in the last three years.  Hopefully, we will stay put for a while after this.  But the next few parties might not have features.  It’ll just depend on what kind of time I have.  With that being said, here’s a couple shout outs to some of the links from last week:

I am totally in love with this idea from Creating Sarah.  It’s very possible that I will steal this once we move into our new house.  I love that everything is all right there, along with the recipe (so anyone can cook it!).

{Printable} 2012 Grad Subway Art & Card

**I attempted to fix the issues with 4shared.  If you’re still getting error messages try the directions at the bottom of the post to download from photobucket.  Unfortunately, it’s a little longer process.  Sorry for any inconvenience this causes.**

Last year, I made a subway art piece with a Graduation theme.  And graduation season is fast-approaching again!  It doesn’t seem like it’s been a whole year already.  For those of you that have graduations at the end of the month (or those of you getting a jump on the May and June Grads in your life), here is an updated version of the piece.  Click the links and download your free copies of watermark-free versions.

*If you try the 4shared links and they don’t work try this:
1.  Follow the links to photobucket.  THIS ONE for the poster.  THIS ONE for the card.
2. Hover your cursor over the image and some information should pop up at the top of the image, including a command bar.
3. Move your cursor over “File” and a menu should drop down.  The bottom option should be “Download”. Select it.
4.  Save the file to your computer and then you can print it from there.
-As you can see, this is a little more involved of a process, so I’d check the 4shared links.  
I will be putting in an email to 4shared to see if I can find out what the problem is.  Some people are able to get to the links, so they are only broken sometimes.  And it’s my original work and file, so there shouldn’t be any Terms of Use issues…  Thanks for being so patient, my friends.

{30 Minute Meals} Tuna Noodle Casserole

 

TUNA NOODLE CASSEROLE

Ingredients:
1 package of Spiral Egg Noodles
1 can of tuna, drained
1 small package of frozen peas (my mom uses a peas and carrots mix sometimes to change up the flavor a bit.)
1 can condensed cream of mushroom soup

Directions:
1.  Cook your egg noodles according to the directions on the package.
2.  Drain.  Butter if desired.
3.  Mix tuna, frozen veggies and soup (uncondensed) well.
4.  Stir in milk to thin if needed.

Serves 4-6

*If you want a stronger flavor, consider adding some garlic powder, minced onions, some lemon pepper or a small pinch of cayenne pepper.
